New Product: Rendered Chicken Fat

This week has been an interesting one… Another hurricane and power outages across the state. We hope that your family and home weathered the storm without any problems, and it sure is nice to celebrate the return of the sun. We’re celebrating the return of the sun this week in a special way—with a new product offering. Our Rendered Chicken Fat is offered in 12 oz. containers, and is perfect for pan-frying pretty much anything! Come on by The Corner Farmers Market tomorrow from 8am-12pm to grab yours.

Not only does it add a tastiness to your dishes that you didn’t even know you were missing, but it has a higher smoking point than butter! It’s great subbed for butter in a roux, added to the pastry for a chicken pot pie, or used for sautéing vegetables (any veggie shines in chicken fat).

Refined oils are often weird blends of many rancid oils, and bleaching agents, deodorizers, detergents, coloring, and other additives are including in what might be mislabeled as a pure, organic oil. The traceability of our product is high… You know that it came from our pasture-raised chickens straight to your frying pan.

A Healthier Fat?

We’ll let you make your own determination about how much fat you’d like to include in your diet, but there’s no denying the high levels of vitamin E, vitamin D, and choline in chicken fat. Plus, because our birds are free ranging on pasture, you can be sure that chicken fat from KW Homestead has higher levels of omega-3s than fat from birds raised indoors.

We raise only the best, most nutrient dense meats here at KW Homestead! All of our birds are raised outside, on pasture, free ranging around the woods and grasses. They’re supplemented with non-GMO grain and are humanely harvested when they mature.

Because we only raise pastured birds, we don’t raise birds in winter, when there’s no green pasture for them to enjoy. For this reason, we are sometimes out of stock on our more popular cuts of meat in the early spring. But never fear, all of our Red Ranger chicken parts are now back in stock! Red Ranger Chickens on Pasture

Our Red Ranger broiler chickens are truly pasture raised! They spend their days eating grass, bugs, and worms and ranging around through the greenery. Here’s a video of our newest batch of birds, taking time out in the heat of the day to relax.

 

Red Ranger Chicks Have Arrived!

This video shows our cute and active Red Ranger chicks—the first batch of 2018.

Our Red Ranger chicks spend the first few weeks of their life in a warm brooder, and At about 3 weeks old they move outside to pasture. Right now they’re small and don’t eat very much food, but they won’t stay little for long. In a few months they’ll be mature, large roosters. Amazing!

 

Pasture Raised Chicken Liver: Your New Superfood

Not All Liver is Created Equal…

Livers might not be a part of your usual diet, and if they’re not, now is a great time to start supplementing your body with this super food.

Traditional livers bought in an average grocery store don’t benefit you as much as you might think. Although they carry many of the same micro nutrients as our livers, they also carry the toxins that the animal, which has been raised in a cage or inside and fed subpar feed, has accrued in its organs throughout its life span. The liver is one of the organs that holds onto all of the toxins and chemicals that the animal has come in contact with or consumed. So while these livers carry positive nutrients they also carry detrimental ingredients as well. But, KW Homestead’s chicken livers are only beneficial! Because our chickens are raised on pasture and fed non GMO feed that is fresh, high-quality, and local, their livers are as clean as can be! This means that when you supplement your diet and your family’s diet with our chicken livers you can only expect good things.

Liver is a Nutritional Powerhouse

Did you know that a 100g serving of chicken liver provides MORE THAN HALF of the recommended daily amount for iron?!

One serving, around 3.5 oz of chicken liver, offers 172 calories, more than 100 of which come from protein! This serving contains 25.8g of protein, which provides MORE THAN 40% of your recommended daily amount for protein.

Wonderfully, chicken liver is a complete protein because it contains ALL of the essential amino acids, which are those that your body cannot produce. One serving provides MORE THAN 50% of the requirement for all essential amino acids!

One serving also supplies MORE THAN 100% of the recommended amount of vitamin A, folate, pantothenic acid, riboflavin, and B12 and MORE THAN 50% of your daily needs of choline, vitamin B6, and niacin.

A Few Liver Recipes

Our two favorite ways to cook with liver are by creating a pate with butter and spices and by making a liver dumpling soup. Both methods have their merits, with the dumpling soup perhaps better suited for folks who don’t love the taste of liver.

Guard Geese to the Rescue!

Our trio of geese stand guard over our free range, pasture raised flock of Red Ranger broilers. Their presence protects from aerial predators and they deter four-footed creatures with their ridiculously loud honking! Check out this video to hear them sound the alarm, even though it’s only us approaching. Good job, geese!

We love seeing customers at the Farmers Market, but sometimes you just can’t make it!

We realize that sometimes it’s hard to get to the farmers market, but that doesn’t mean you want to go an entire week without your delicious, free range poultry fix. So, we decided to offer a delivery option to our local customers, both old and new.

Delivery Fees and Protocol

For now, until we get our new online store fully stocked and functional, we will be taking delivery orders by email. We’ll then let you know your delivery date, and ask that if you will not be home, to leave a cooler with ice packs by your front door, preferably in the shade.

  • Orders  $150 and over receive free delivery!
  • Orders $40  – $149 have a $7.95 delivery fee.
  • Orders $30 – $39.99 have a $9.95 delivery fee.
  • Orders $15 – $29.99 have a $14.95 delivery fee.
  • Orders under $15 have a $22.95 delivery fee.

The more you buy, the lower the fee! Of course, all orders picked up at the farmers market in Greensboro are always free.

These fees also apply to our Chicken CSA customers who would like to take advantage of home delivery. In this case, we will use your discounted price to figure out the delivery fee. For example, our Deluxe Chicken CSA is $4.99/lb, so if you order two 4.5 pound chickens, your product total is $44.91 (9 lbs x $4.99) with an added delivery fee of $7.95.  You could also add other items, like a dozen duck eggs, to this order if you like!

Farm Food Friday: Pulled Chicken Tacos with Tomatillos and Cilantro

We are a pretty hungry family, and making food in bulk is a great idea for us. Usually every Saturday we cook 2 of our Red Ranger Chickens, and this week was no different. This time we decided to make pulled chicken for eating tacos with the large pile of ripe and yummy avocados that we always seem to have in the house these days!

Here’s the details… Enjoy!

Ingredients:

  • 2 whole Red Ranger chickens
  • 3 pints of pureed tomatillos
  • 1 or 2 bunches of cilantro (this depends on how much you love cilantro)
  • 2 onions
  • salt, pepper, & garlic
  • cayenne pepper, paprika, & oregano

Materials:

  • 1 large pot
  • 1 large bowl
  • knife for slicing onions and cilantro
  • stirring spoon

This finished, pulled chicken was a version that we made with some pureed tomatoes added as well.

Recipe:

  1. First part up your chickens, but leave the skin on, folks! So many of the great nutrients are in the skin, and you can always shred the skin into small pieces that will be undetectable once you start eating your tacos.
  2. Place all the parts in your large pot with a little bit of water. We use a large cast iron pot and place the whole thing in the oven on 400, but you could always use your pot on the stove top and simmer the meat until it’s cooked and ready to fall off the bone.
  3. Let your meat cool and then shred it off of the bone (into the large bowl), making sure to remove any cartilage if you don’t want that kind of thing in your tacos!
  4. Add the shredded chicken back to your pot. If there’s a small amount of broth in the bottom of your pot from cooking the chicken, feel free to leave it in there to mix in with the shredded chicken. If there’s a lot of broth, remove some first (but save it and drink it… Yum!).
  5. Slice the onions and cilantro.
  6. Add the onions, cilantro, and tomatillos to the chicken.
  7. Add a small amount of salt, garlic, pepper, cayenne pepper, paprika, and oregano, to taste. Keep in mind that the cilantro and tomatillos really carry the dish, and so the spices are just for a little bit of added flavor… You don’t need to get heavy-handed with the spice. Mix everything together well with your spoon!
  8. Place this back in the oven or on the stove top, checking periodically until the onions are soft. Then it’s ready!

What Do Chicks Need to Thrive?

For those of you raising chickens for the first time, or just for those of you who are interested in the way we do things around here, this video gives you a brief summary of what supplies you need to make sure that your little ones make it through the first days.

We just received our 204 Red Rangers in the mail (we ordered 200 but they often send extra), and they are all set up and safe in their brooder space. They have lights for warmth, food, water, and space to explore and interact with each other. They also have guard geese living outside their brooder, which is an old, truck camper shell with hardware cloth added. Check out the video below!
